Method
Prepare the Zucchini
- Preheat the oven to 350°F (175°C). Grate the zucchini and set aside.
Mix Wet Ingredients
- In a mixing bowl, combine the grated zucchini, vegetable oil, sugar, eggs, and vanilla extract. Whisk until smooth.
Combine Dry Ingredients
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Combine Mixtures
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in chocolate chips if using.
Bake
- Pour the batter into a greased 9x13 inch baking pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Cool and Serve
- Allow the brownies to cool in the pan for at least 10 minutes before cutting into squares and serving.
