Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tsp garlic powder
Wet Ingredients
  • 1 cup shredded zucchini excess moisture squeezed out
  • 1/2 cup milk or non-dairy alternative
  • 1/4 cup butter melted
  • 1 large egg
Optional Ingredients
  • 1/2 cup shredded cheese cheddar or your choice
  • 1/4 cup chopped fresh herbs like chives or parsley

Method
 

Prepare the Oven and Baking Sheet
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Mix Dry Ingredients
  1. In a mixing bowl, whisk together the flour, baking powder, salt, and garlic powder until well combined.
Combine Wet Ingredients
  1. In another bowl, mix the shredded zucchini, milk, melted butter, and egg until smooth.
Combine Mixtures
  1. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Add Optional Ingredients
  1. If using, fold in the shredded cheese and herbs into the biscuit dough.
Shape and Bake
  1. Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 15-20 minutes or until golden brown.
Cool and Serve
  1. Remove from the oven and let cool slightly before serving warm.
