Prepare the Syrup
- In a saucepan, combine the water and granulated sugar over medium heat. Stir until the sugar is completely dissolved.
- Add the pumpkin puree, vanilla extract, and pumpkin pie spice to the saucepan. Whisk until smooth and well combined.
- Bring the mixture to a gentle simmer and let it cook for about 10 minutes, stirring occasionally.
- Remove from heat and stir in the mini marshmallows until they are melted and fully incorporated.
- Allow the syrup to cool slightly before transferring it to a storage jar.
