Ingredients
  

Fruits
  • 2 cups watermelon, cubed seedless
  • 2 cups peaches, sliced fresh and ripe
  • 1 cup cucumber, diced optional
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon honey optional
Garnish
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup feta cheese crumbled, optional

Method
 

Prepare the Ingredients
  1. Cube the watermelon and slice the peaches. If using, dice the cucumber.
Make the Dressing
  1. In a small bowl, whisk together olive oil, lime juice, and honey until well combined.
Combine Salad
  1. In a large mixing bowl, combine the watermelon, peaches, and cucumber. Drizzle with the dressing and toss gently.
Garnish and Serve
  1. Top the salad with chopped mint and crumbled feta cheese if desired. Serve immediately.
