Ingredients
  

Chicken and Marinade
  • 1 pound boneless chicken breasts cut into bite-sized pieces
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon cornstarch for thickening
Vegetables and Sauce
  • 2 medium ripe peaches sliced
  • 1 bell pepper red sliced
  • 1 cup snap peas
  • 2 cloves garlic minced
  • 1 tablespoon ginger freshly grated
  • 1 tablespoon brown sugar
  • 1 tablespoon vegetable oil for cooking
  • 1 teaspoon red chili flakes optional for heat
Garnish
  • 2 tablespoons fresh cilantro chopped
  • 1 lime wedges for serving

Method
 

Marinate the Chicken
  1. In a bowl, combine chicken pieces, soy sauce, fish sauce, lime juice, and cornstarch. Mix well and let marinate for 15 minutes.
Cook the Chicken
  1. Heat vegetable oil in a large skillet over medium-high heat. Add marinated chicken and cook until browned and cooked through, about 7-10 minutes.
Add Vegetables and Peaches
  1. Add garlic, ginger, bell pepper, snap peas, and sliced peaches to the skillet. Stir-fry for another 5-7 minutes until vegetables are tender.
Finish the Sauce
  1. Sprinkle brown sugar and red chili flakes over the mixture. Stir well to combine and cook for an additional 2 minutes.
Serve
  1. Remove from heat, garnish with fresh cilantro, and serve with lime wedges on the side.
