Ingredients
  

Salad Base
  • 2 cups mixed salad greens
  • 1 cup cucumber sliced
  • 1 cup carrots shredded
  • 1 cup red bell pepper sliced
  • 1/2 cup red onion thinly sliced
Chicken
  • 2 cups grilled chicken breast sliced
Dressing
  • 3 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar or honey
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh cilantro chopped
  • 1 teaspoon fresh mint chopped
  • 1 teaspoon red chili flakes optional

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper.
  3. Grill the chicken for about 6-7 minutes on each side or until fully cooked.
  4. Remove from grill and let it rest for 5 minutes before slicing.
Make the Dressing
  1. In a mixing bowl, whisk together lime juice, fish sauce, sugar, and sesame oil until well combined.
  2. Stir in chopped cilantro, mint, and red chili flakes if using.
Assemble the Salad
  1. In a large bowl, combine mixed greens, cucumber, carrots, red bell pepper, and red onion.
  2. Add the sliced grilled chicken on top.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Serve immediately and enjoy!

Notes
