Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
Vegetables
  • 2 medium zucchini sliced
  • 1 medium bell pepper diced
  • 1 medium onion diced
Spices
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/4 cup fresh cilantro chopped

Method
 

Cook Chicken
  1. Heat olive oil in a skillet over medium heat. Add the chicken pieces and season with chili powder, cumin, garlic powder, salt, and black pepper. Cook until the chicken is browned and cooked through, about 7-10 minutes.
Add Vegetables
  1. Add the diced onion, bell pepper, and sliced zucchini to the skillet. Sauté for an additional 5-7 minutes until the vegetables are tender.
Serve
  1. Remove from heat and sprinkle with shredded cheese and chopped cilantro before serving.
