Prepare the Cookie Dough
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Shape and Bake Cookies
- Roll out the dough on a floured surface to about 1/4 inch thick.
- Use a cookie cutter to cut out shapes and place them on a baking sheet lined with parchment paper.
- Spoon a small amount of strawberry jam onto half of the cookie shapes, then top with another cookie shape, sealing the edges.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
Prepare the Glaze
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Add food coloring if desired and mix until well combined.
Finish and Serve
- Once the cookies are cool, drizzle the glaze over the top.
- Let the glaze set for a few minutes before serving.
