Prepare the Filling
- In a mixing bowl, combine ground pork, green onions, shredded carrots, garlic, soy sauce, sesame oil, ginger, salt, and black pepper. Mix well until fully combined.
- Cover the filling and refrigerate for 15 minutes to let the flavors meld.
Assemble the Dumplings
- Place a dumpling wrapper on a clean surface. Add about 1 tablespoon of filling to the center of the wrapper.
- Moisten the edges of the wrapper with water, fold it in half, and pinch the edges to seal. Repeat with remaining wrappers and filling.
Steam the Dumplings
- Prepare your steamer by lining it with parchment paper or cabbage leaves to prevent sticking.
- Place the dumplings in the steamer, making sure they are not touching. Steam over boiling water for 10-12 minutes until cooked through.
Make the Sauce
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, and chili oil (if using).
- Garnish with chopped cilantro before serving.
Serve
- Serve the steamed dumplings hot with the dipping sauce on the side.
