Ingredients
  

Quinoa Base
  • 1 cup quinoa rinsed and drained
  • 2 cups water for cooking quinoa
Vegetables
  • 1 cup spinach chopped
  • 1 medium carrot grated
  • 1 small zucchini grated and excess water squeezed out
  • 1 clove garlic minced
  • 1 small onion finely chopped
Binding Ingredients
  • 1 large egg beaten
  • 1 cup breadcrumbs whole wheat preferred
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
Cooking Ingredients
  • 2 tablespoons olive oil for frying

Method
 

Cook Quinoa
  1. In a saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and let cool.
Mix Ingredients
  1. In a large mixing bowl, combine cooked quinoa, chopped spinach, grated carrot, grated zucchini, minced garlic, and chopped onion.
Add Binders
  1. Add beaten egg, breadcrumbs, salt, black pepper, and cumin to the vegetable mixture. Mix well until combined.
Form Patties
  1. Shape the mixture into patties, about 2 inches in diameter. Place them on a baking sheet lined with parchment paper.
Cook Patties
  1. Heat olive oil in a frying pan over medium heat. Fry the patties for about 4-5 minutes on each side until golden brown and crispy.
Serve
  1. Remove from pan and let cool slightly. Serve warm with your favorite dipping sauce.
