Ingredients
  

For the Bruschetta
  • 4 slices French baguette or any crusty bread
  • 2 medium ripe peaches diced
  • 1 tablespoon honey optional, for drizzling
  • 1 tablespoon fresh basil chopped, for garnish
For the Whipped Ricotta
  • 1 cup ricotta cheese whole milk ricotta preferred
  • 1 tablespoon olive oil extra virgin
  • 1 pinch salt

Method
 

Prepare the Whipped Ricotta
  1. In a mixing bowl, combine ricotta cheese, olive oil, and salt. Blend using a blender or food processor until smooth and creamy.
  2. Transfer the whipped ricotta to a serving bowl and set aside.
Toast the Bread
  1. Preheat the oven to 400°F (200°C).
  2. Place the baguette slices on a baking sheet and drizzle with olive oil. Toast in the oven for about 5 minutes or until golden brown.
Assemble the Bruschetta
  1. Spread a generous amount of whipped ricotta on each toasted baguette slice.
  2. Top with diced peaches and drizzle with honey if desired. Garnish with chopped basil.
