Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken thighs cut into bite-sized pieces
Pumpkin Sauce
  • 1 cup canned pumpkin puree
  • 1 cup coconut milk full fat for creaminess
  • 2 tablespoons pumpkin spice
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Garnish
  • 2 tablespoons fresh cilantro chopped

Method
 

Prepare the Chicken
  1. Heat a skillet over medium heat and add the chicken pieces. Cook until browned and cooked through, about 8-10 minutes.
Make the Pumpkin Sauce
  1. In a bowl, combine the pumpkin puree, coconut milk, pumpkin spice, garlic powder, ginger powder, salt, and black pepper. Mix well.
Combine and Simmer
  1. Pour the pumpkin sauce over the cooked chicken in the skillet. Stir to combine and let it simmer for 10-15 minutes, allowing the flavors to meld.

  1. Serve the pumpkin butter chicken hot, garnished with fresh cilantro.
