Ingredients
  

Crumble Base and Topping
  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1/4 teaspoon salt
Peach Filling
  • 3 cups fresh peaches sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
Cream Layer
  • 1 cup cream cheese softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the Crumble Base
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, oats, brown sugar, melted butter, and salt. Mix until crumbly.
  2. Press half of the crumble mixture into the bottom of a greased 9x9 inch baking pan.
Make the Peach Filling
  1. In a separate bowl, combine sliced peaches, granulated sugar, lemon juice, and cornstarch. Toss to coat the peaches evenly.
Prepare the Cream Layer
  1. In another bowl, beat the softened cream cheese, granulated sugar, vanilla extract, and egg until smooth and creamy.
Assemble and Bake
  1. Spread the cream layer over the pressed crumble base in the baking pan.
  2. Layer the peach filling on top of the cream layer, then sprinkle the remaining crumble mixture over the top.
  3. Bake in the preheated oven for 30 minutes or until the top is golden brown.
Cool and Serve
  1. Allow the bars to cool completely in the pan before cutting into squares. Serve warm or at room temperature.
