Method
Prepare the Crumble Base
- Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, oats, brown sugar, melted butter, and salt. Mix until crumbly.
- Press half of the crumble mixture into the bottom of a greased 9x9 inch baking pan.
Make the Peach Filling
- In a separate bowl, combine sliced peaches, granulated sugar, lemon juice, and cornstarch. Toss to coat the peaches evenly.
Prepare the Cream Layer
- In another bowl, beat the softened cream cheese, granulated sugar, vanilla extract, and egg until smooth and creamy.
Assemble and Bake
- Spread the cream layer over the pressed crumble base in the baking pan.
- Layer the peach filling on top of the cream layer, then sprinkle the remaining crumble mixture over the top.
- Bake in the preheated oven for 30 minutes or until the top is golden brown.
Cool and Serve
- Allow the bars to cool completely in the pan before cutting into squares. Serve warm or at room temperature.
