Method
Prepare the Crust and Topping
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, oats, brown sugar, melted butter, salt, and cinnamon.
- Mix until crumbly and set aside half for the topping.
- Press the remaining mixture into the bottom of a greased 9x9 inch baking pan.
Make the Peach Filling
- In another bowl, mix sliced peaches, granulated sugar, lemon juice, and cornstarch until well combined.
- Spread the peach mixture evenly over the crust in the baking pan.
Assemble and Bake
- Sprinkle the reserved crumble mixture over the peach filling.
- Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown.
- Remove from the oven and let cool before cutting into bars.
