Ingredients
  

Crust and Topping
  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter melted
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
Peach Filling
  • 4 cups fresh peaches peeled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch

Method
 

Prepare the Crust and Topping
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, oats, brown sugar, melted butter, salt, and cinnamon.
  3. Mix until crumbly and set aside half for the topping.
  4. Press the remaining mixture into the bottom of a greased 9x9 inch baking pan.
Make the Peach Filling
  1. In another bowl, mix sliced peaches, granulated sugar, lemon juice, and cornstarch until well combined.
  2. Spread the peach mixture evenly over the crust in the baking pan.
Assemble and Bake
  1. Sprinkle the reserved crumble mixture over the peach filling.
  2. Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown.
  3. Remove from the oven and let cool before cutting into bars.
