One Pot Garlic Parmesan Chicken Pasta

Ingredients
  

Chicken and Pasta
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 8 oz penne pasta or any pasta of choice
  • 4 cups chicken broth low sodium preferred
  • 1 cup heavy cream for creaminess
  • 1 cup parmesan cheese grated, plus more for serving
Seasonings
  • 4 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 2 tablespoons olive oil for cooking
Garnish
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

Cook Chicken
  1. In a large pot, heat olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  2. Remove the chicken from the pot and set aside.
Sauté Garlic
  1. In the same pot, add minced garlic and sauté for about 1 minute until fragrant.
Add Pasta and Broth
  1. Add the penne pasta, chicken broth, and Italian seasoning to the pot. Stir to combine.
Cook Pasta
  1. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 10-12 minutes, or until the pasta is al dente.
Add Cream and Cheese
  1. Stir in the heavy cream and parmesan cheese until well combined. Add the cooked chicken back into the pot and mix well.
Serve
  1. Serve hot, garnished with chopped parsley and additional parmesan cheese if desired.
