Method
Cook Chicken
- In a large pot, heat olive oil over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
- Remove the chicken from the pot and set aside.
Sauté Garlic
- In the same pot, add minced garlic and sauté for about 1 minute until fragrant.
Add Pasta and Broth
- Add the penne pasta, chicken broth, and Italian seasoning to the pot. Stir to combine.
Cook Pasta
- Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 10-12 minutes, or until the pasta is al dente.
Add Cream and Cheese
- Stir in the heavy cream and parmesan cheese until well combined. Add the cooked chicken back into the pot and mix well.
Serve
- Serve hot, garnished with chopped parsley and additional parmesan cheese if desired.
