Ingredients
  

Chicken Marinade
  • 1 lb chicken tenders skinless and boneless
  • 3 tbsp olive oil extra virgin
  • 2 tbsp lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp salt to taste
  • 1/2 tsp black pepper freshly ground
Serving
  • 1 cup tzatziki sauce for dipping
  • 1 cup mixed greens for serving
  • 1 cup cherry tomatoes halved

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper.
  2. Add the chicken tenders to the marinade and toss to coat evenly.
  3. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Cook the Chicken
  1. Preheat the oven to 400°F (200°C).
  2. Arrange the marinated chicken tenders on a baking sheet in a single layer.
  3. Bake for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
  4. Remove from the oven and let rest for 5 minutes before serving.
Serve
  1. Serve the chicken tenders with tzatziki sauce, mixed greens, and cherry tomatoes.
