Main Ingredients
  • 1 lb chicken thighs bone-in, skin-on
  • 1 lb smoked sausage sliced
  • 1 cup long grain rice uncooked
  • 4 cups chicken broth low sodium
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsp thyme dried
  • 1 tsp black pepper freshly ground
  • 1 tsp salt to taste
  • 2 stalks green onions sliced for garnish

Method
 

Cooking the Chicken and Sausage
  1. In a large pot, heat olive oil over medium heat. Add the chicken thighs and sausage, cooking until browned on all sides, about 5-7 minutes.
  2. Remove the chicken and sausage from the pot and set aside.
Sautéing Vegetables
  1. In the same pot, add diced onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
Simmering the Dish
  1. Return the chicken and sausage to the pot. Add chicken broth, paprika, thyme, black pepper, and salt. Bring to a boil.
  2. Stir in the rice, reduce heat to low, cover, and simmer for 25-30 minutes or until the rice is tender and has absorbed the liquid.
Serving
  1. Once cooked, fluff the rice with a fork and serve hot, garnished with sliced green onions.
