Prepare the Eggplant
- Slice the eggplants into 1/2 inch rounds and sprinkle with salt. Let them sit for 15 minutes to sweat.
- Rinse the eggplant slices under cold water and pat dry with a paper towel.
Season and Cook
- In a bowl, mix the garlic powder, paprika, black pepper, and oregano.
- Brush the eggplant slices with olive oil and sprinkle the seasoning mixture evenly over them.
- Preheat the air fryer to 375°F (190°C).
- Place the seasoned eggplant slices in the air fryer basket in a single layer. Cook for 15-20 minutes, flipping halfway through, until golden and crispy.
Serve
- Remove the eggplant from the air fryer and serve warm as an appetizer or side dish.
