Ingredients
  

Salad Base
  • 1 cup quinoa rinsed
  • 1 can chickpeas drained and rinsed
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare Quinoa
  1. In a medium pot, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let cool.
Mix Salad
  1. In a large mixing bowl, combine the cooked quinoa, chickpeas, cucumber, cherry tomatoes, red onion, and parsley.
Prepare Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
Combine
  1. Pour the dressing over the salad and toss gently to combine. Adjust seasoning if necessary.
Serve
  1. Serve chilled or at room temperature. Enjoy your healthy salad!
