Ingredients
  

Pasta and Vegetables
  • 12 oz cheese tortellini fresh or frozen
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup black olives sliced
  • 1/2 cup feta cheese crumbled
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp Italian seasoning
  • 1 clove garlic minced

Method
 

Prepare the Tortellini
  1. Cook the cheese tortellini according to package instructions until al dente. Drain and rinse under cold water to cool.
Mix the Salad
  1. In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and feta cheese.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, minced garlic, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine. Serve immediately or refrigerate for 30 minutes to let flavors meld.
