Ingredients
  

Dough
  • 1 cup all-purpose flour plus extra for dusting
  • 1/4 cup unsalted butter cold and cubed
  • 1/4 cup sour cream or Greek yogurt
  • 1 large egg for egg wash
Filling
  • 1 cup fruit preserves such as strawberry or raspberry
  • 1 tablespoon cornstarch to thicken filling
  • 1 teaspoon vanilla extract
Icing
  • 1 cup powdered sugar
  • 2 tablespoons milk adjust for consistency
  • 1/2 teaspoon vanilla extract

Method
 

Prepare the Dough
  1. In a mixing bowl, combine flour and cold butter. Mix until crumbly.
  2. Add sour cream and mix until a dough forms. Wrap in plastic and refrigerate for 30 minutes.
Make the Filling
  1. In a small bowl, mix fruit preserves, cornstarch, and vanilla extract until combined.
Assemble the Strudels
  1. Preheat the oven to 400°F (200°C). Roll out the dough on a floured surface to 1/8 inch thick.
  2. Cut the dough into rectangles (about 4x6 inches).
  3. Place a tablespoon of filling in the center of each rectangle. Fold over and seal edges with a fork.
  4. Brush the tops with beaten egg.
Bake
  1. Place the strudels on a baking sheet lined with parchment paper. Bake for 15 minutes or until golden brown.
Prepare the Icing
  1. In a bowl, whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over cooled strudels.
