Prepare the Burger Mixture
- In a mixing bowl, combine the ground beef, half of the shredded cheddar cheese, cream cheese, chopped jalapeños, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Form the mixture into small patties, about 1 inch in diameter.
Cook the Burger Bites
- Preheat the grill or stovetop skillet over medium heat.
- Cook the patties for about 3-4 minutes on each side, or until fully cooked and browned.
Assemble the Bites
- Preheat the oven to 350°F (175°C).
- Place the cooked patties on the mini burger buns. Top each with the remaining shredded cheddar cheese.
- Brush the tops of the buns with olive oil and place them on a baking sheet.
- Bake in the oven for about 5-7 minutes, or until the cheese is melted and the buns are slightly toasted.
- Serve the cheeseburger bites with shredded lettuce, tomato slices, and pickles.
