Herby Ricotta Stuffed Peppers

Ingredients
  

Stuffed Peppers
  • 4 pieces Bell Peppers Any color, tops cut off and seeds removed
  • 1 cup Ricotta Cheese Fresh or store-bought
  • 1 cup Spinach Chopped, fresh or frozen
  • 1/2 cup Parmesan Cheese Grated
  • 2 tablespoons Fresh Basil Chopped
  • 1 tablespoon Fresh Parsley Chopped
  • 1 clove Garlic Minced
  • 1 teaspoon Salt To taste
  • 1/2 teaspoon Black Pepper To taste
  • 1 tablespoon Olive Oil For drizzling

Method
 

Prepare the Peppers
  1. Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds.
  2. Place the peppers upright in a baking dish.
Make the Filling
  1. In a mixing bowl, combine the ricotta cheese, chopped spinach, grated Parmesan, basil, parsley, minced garlic, salt, and black pepper. Mix until well combined.
Stuff the Peppers
  1. Spoon the ricotta mixture into each bell pepper until they are filled to the top.
  2. Drizzle olive oil over the stuffed peppers.
Bake
  1. Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
  2. Remove the foil and bake for an additional 5 minutes, or until the peppers are tender and the tops are slightly golden.
Serve
  1. Remove from the oven and let cool slightly before serving.
