Dry Ingredients
  • 1 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
Wet Ingredients
  • 2 medium ripe bananas mashed
  • 1 cup zucchini grated
  • 1/3 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 large egg
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
  2. In a mixing bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, combine the mashed bananas, grated zucchini, honey, applesauce, egg, and vanilla extract until well mixed.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
