Ingredients
  

Herbs and Spices
  • 1 cup fresh cilantro stems removed
  • 1 cup fresh parsley stems removed
  • 1 tablespoon fresh thyme leaves only
  • 1 tablespoon green onions chopped
  • 4 cloves garlic peeled
  • 1 small scotch bonnet pepper seeded for less heat
Liquids
  • 1/2 cup olive oil
  • 1/4 cup lime juice freshly squeezed
Seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Ingredients
  1. Wash and chop the herbs, green onions, and garlic.
  2. Remove the seeds from the scotch bonnet pepper if you prefer less heat.
Blend the Mixture
  1. In a blender, combine all the herbs, garlic, scotch bonnet pepper, olive oil, lime juice, salt, and black pepper.
  2. Blend until smooth, scraping down the sides as necessary.
Store the Seasoning
  1. Transfer the green seasoning to a glass jar and store in the refrigerator.
  2. Use within a week for the best flavor.
