Ingredients
  

Chicken Marinade
  • 1 pound chicken breast cut into 1-inch cubes
  • 3 tablespoons olive oil extra virgin
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 cup Parmesan cheese grated
Vegetables (optional)
  • 1 bell pepper red cut into chunks
  • 1 bell pepper green cut into chunks
  • 1 small red onion cut into chunks

Method
 

Prepare the Marinade
  1. In a bowl, mix together olive oil, minced garlic, salt, black pepper, and oregano.
  2. Add the chicken cubes to the marinade and toss to coat. Let it marinate for at least 15 minutes.
Assemble the Skewers
  1. Thread the marinated chicken onto skewers, alternating with bell pepper and onion chunks if using.
Grill the Skewers
  1. Preheat the grill to medium-high heat.
  2. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serve
  1. Remove the skewers from the grill and sprinkle with grated Parmesan cheese before serving.

Notes
