Ingredients
  

Soup Base
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 medium celery stalk, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes 14.5 oz
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Ravioli and Greens
  • 9 ounces fresh or frozen ravioli cheese or spinach filling
  • 2 cups fresh spinach
  • 1/4 cup fresh basil, chopped

Method
 

Prepare the Soup Base
  1. In a large pot, heat olive oil over medium heat. Add diced onion, carrot, and celery. Sauté until softened, about 5-7 minutes.
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Add vegetable broth, diced tomatoes, Italian seasoning, salt, and black pepper. Bring to a boil.
Cook the Ravioli
  1. Once boiling, add the ravioli to the pot. Cook according to package instructions, usually about 4-6 minutes.
  2. Stir in fresh spinach and basil during the last minute of cooking until wilted.
Serve
  1. Ladle the soup into bowls and serve hot. Optionally, garnish with grated Parmesan cheese.

Notes
