Ingredients
  

Casserole Base
  • 2 cups cooked shredded chicken rotisserie chicken works well
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup salsa your favorite type
  • 1 cup cooked rice white or brown
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
Toppings
  • 1 cup shredded lettuce
  • 1 medium tomato diced
  • 1/2 cup sour cream for serving
  • 1/4 cup sliced jalapeños optional

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked shredded chicken, black beans, corn, salsa, cooked rice, cumin, chili powder, and garlic powder. Mix well.
  3. Transfer the mixture to a greased 9x13 inch baking dish and spread evenly.
  4. Top with shredded cheese.
Bake the Casserole
  1. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  2. Remove from the oven and let it cool for a few minutes before serving.
Serve
  1. Top with shredded lettuce, diced tomato, sour cream, and jalapeños if desired.
  2. Serve warm and enjoy!
