Ingredients
  

Salmon and Seasoning
  • 1 lb salmon fillet skinless
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Taco Bowl Base
  • 2 cups cooked brown rice
  • 1 cup black beans canned, rinsed and drained
  • 1 cup corn canned or frozen
  • 1 cup cherry tomatoes halved
  • 1 cup romaine lettuce chopped
Toppings
  • 1/2 cup avocado sliced
  • 1/4 cup cilantro chopped
  • 1/4 cup sour cream
  • 1 lime lime cut into wedges

Method
 

Prepare the Salmon
  1. In a mixing bowl, combine olive oil, cumin, paprika, garlic powder, salt, and black pepper. Rub the mixture over the salmon fillet.
  2. Heat a skillet over medium heat. Cook the salmon for about 4-5 minutes on each side or until cooked through. Remove from heat and flake into bite-sized pieces.
Assemble the Taco Bowls
  1. In each bowl, layer cooked brown rice, black beans, corn, cherry tomatoes, and romaine lettuce.
  2. Top with flaked salmon, avocado slices, chopped cilantro, and a dollop of sour cream.
  3. Serve with lime wedges on the side for squeezing over the bowls.

Notes
