Ingredients
  

Biscuits
  • 2 cups All-purpose flour
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1/4 cup Granulated sugar
  • 1/2 cup Unsalted butter Cold and cubed
  • 3/4 cup Fresh blueberries Can substitute with frozen
  • 1 large Egg Beaten
  • 1/2 cup Milk Whole or 2%
Lemon Glaze
  • 1 cup Powdered sugar
  • 2 tbsp Fresh lemon juice
  • 1 tsp Lemon zest

Method
 

Prepare the Biscuits
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, whisk together the flour, baking powder, salt, and sugar.
  3. Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs.
  4. Gently fold in the blueberries.
  5. In a separate bowl, combine the beaten egg and milk.
  6. Add the wet ingredients to the dry ingredients and stir until just combined.
  7. Turn the dough onto a floured surface and knead gently a few times.
  8. Roll out to about 1-inch thickness and cut into rounds.
  9. Place the biscuits on a baking sheet lined with parchment paper.
  10. Bake for 15-20 minutes or until golden brown.
Make the Lemon Glaze
  1. In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth.
  2. Drizzle the glaze over the warm biscuits once they are out of the oven.
