Ingredients
  

Coleslaw Base
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup chopped fresh cilantro
Dressing
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon lime zest
  • 1 teaspoon honey optional
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded cabbage, shredded carrots, and chopped cilantro.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, lime juice, lime zest, honey (if using), salt, and black pepper until smooth.
Combine
  1. Pour the dressing over the cabbage mixture and toss until everything is well coated.
Chill and Serve
  1. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
