Cowboy Butter Lemon Bowtie Chicken with Broccoli

Ingredients
  

Pasta and Chicken
  • 12 oz bowtie pasta
  • 1 lb chicken breast diced
  • 2 cups broccoli florets fresh or frozen
Cowboy Butter Sauce
  • 1/2 cup unsalted butter melted
  • 2 tbsp garlic minced
  • 1 tbsp fresh parsley chopped
  • 1 tbsp fresh chives chopped
  • 1 tbsp lemon juice freshly squeezed
  • 1 tsp paprika
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Cook the Pasta and Broccoli
  1. In a large pot, bring salted water to a boil. Add the bowtie pasta and cook according to package instructions until al dente, about 10-12 minutes.
  2. During the last 3 minutes of cooking, add the broccoli florets to the pot. Drain the pasta and broccoli in a colander and set aside.
Cook the Chicken
  1. In a skillet over medium heat, add a little oil and cook the diced chicken until golden brown and cooked through, about 8-10 minutes. Season with salt and pepper.
Prepare the Cowboy Butter Sauce
  1. In a bowl, whisk together the melted butter, minced garlic, parsley, chives, lemon juice, paprika, salt, and pepper until well combined.
Combine and Serve
  1. In the skillet with the cooked chicken, add the drained pasta and broccoli. Pour the cowboy butter sauce over the top and toss everything together until well coated.
  2. Serve immediately, garnished with additional parsley if desired.

Notes
