Ingredients
  

Cookie Base
  • 1 cup animal crackers crushed
  • 1/2 cup cream cheese softened
  • 1/4 cup powdered sugar
  • 1/4 cup sprinkles for mixing in
Coating
  • 1 cup white chocolate chips
  • 2 tablespoons coconut oil for melting

Method
 

Prepare the Cookie Mixture
  1. In a mixing bowl, combine crushed animal crackers, softened cream cheese, powdered sugar, and sprinkles. Mix until well combined.
  2. Using your hands, form the mixture into small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
Melt the Coating
  1. In a microwave-safe bowl, combine white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
Coat the Cookie Balls
  1. Dip each cookie ball into the melted white chocolate, ensuring it is fully coated. Return to the baking sheet.
  2. Sprinkle additional sprinkles on top of the coated balls before the chocolate sets.
Chill and Serve
  1. Refrigerate the cookie balls for at least 30 minutes to allow the coating to set.
