Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder unsweetened
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup grated zucchini about 1 medium zucchini
Optional Ingredients
  • 1/2 cup chocolate chips semi-sweet or dark

Method
 

Prepare the Oven and Pan
  1. Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
Mix Dry Ingredients
  1. In a mixing bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
Mix Wet Ingredients
  1. In another bowl, combine the sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
Combine Mixtures
  1. Add the wet mixture to the dry ingredients and stir until just combined. Fold in the grated zucchini and chocolate chips if using.
Bake
  1. Pour the batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
Cool and Serve
  1. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
