Prepare the BBQ Chicken
- In a mixing bowl, combine chipotle beer, BBQ sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and marinate in the refrigerator for at least 30 minutes.
- Preheat the grill to medium-high heat. Remove chicken from marinade and discard the marinade.
- Grill chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).
Make the Creamed Corn
- In a saucepan, melt butter over medium heat. Add corn and cook for 5 minutes, stirring occasionally.
- Stir in heavy cream, sugar, salt, and black pepper. Cook for an additional 10 minutes, stirring frequently until thickened.
- Remove from heat and stir in chopped parsley before serving.
Serve
- Serve the grilled BBQ chicken alongside the creamed corn. Enjoy!
