Ingredients
  

Vegetables
  • 4 cups fresh broccoli florets steamed until tender
  • 1 cup chopped onion optional
Sauce
  • 1 can cream of mushroom soup or cream of chicken
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese plus more for topping
Topping
  • 1 cup Ritz crackers crushed
  • 2 tablespoons butter melted

Method
 

Prepare the Broccoli
  1. Preheat the oven to 350°F (175°C).
  2. Steam the broccoli florets until tender, about 5 minutes.
Make the Casserole Mixture
  1. In a mixing bowl, combine the cream of mushroom soup, sour cream, and shredded cheddar cheese.
  2. Stir in the steamed broccoli and chopped onion (if using) until well mixed.
Assemble the Casserole
  1. Transfer the broccoli mixture to a greased 9x13 inch baking dish.
  2. In a separate bowl, mix the crushed Ritz crackers with melted butter, then sprinkle evenly over the casserole.
Bake
  1. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
  2. Remove from the oven and let it cool for a few minutes before serving.
