Ingredients
  

Salad Base
  • 4 cups mixed greens such as spinach and arugula
  • 1 cup blueberries fresh or frozen
  • 2 medium peaches sliced
Feta and Nuts
  • 1 cup feta cheese crumbled
  • 1/2 cup walnuts chopped
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey optional
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper freshly ground

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, blueberries, and sliced peaches.
  2. Add the crumbled feta cheese and chopped walnuts on top.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and black pepper until well combined.
Combine and Serve
  1. Drizzle the dressing over the salad and toss gently to combine.
  2. Serve immediately on salad plates.
