  • 2 medium Zucchini sliced
  • 2 medium Tomatoes sliced
  • 1 medium Onion sliced
  • 3 cloves Garlic minced
Seasoning
  • 3 tablespoons Balsamic Vinegar
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Black Pepper to taste
Cheese
  • 1 cup Mozzarella Cheese shredded
  • 1/4 cup Parmesan Cheese grated

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini, tomatoes, and onion, and mince the garlic.
Mixing Ingredients
  1. In a large bowl, combine the sliced zucchini, tomatoes, onion, and minced garlic.
  2. Drizzle with balsamic vinegar, and season with oregano, salt, and pepper. Toss to coat evenly.
Baking
  1. Transfer the vegetable mixture to a baking dish.
  2. Sprinkle the mozzarella and Parmesan cheese evenly over the top.
  3. Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and the cheese is bubbly and golden.
Serving
  1. Remove from the oven and let cool for a few minutes before serving.
