Method
Prepare the Oven
- Preheat the oven to 400°F (200°C).
Make the Spice Mix
- In a mixing bowl, combine paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano, salt, and black pepper.
Season the Cod
- Pat the cod fillets dry with paper towels. Rub each fillet with olive oil and then coat generously with the blackening spice mix.
Bake the Cod
- Place the seasoned cod fillets on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the fish flakes easily with a fork.
Serve
- Remove from the oven and serve hot with lemon wedges.
