  • 7 to 8 cups seedless watermelon, cut into ¾ inch cubes
  • 1 ½ cups fresh blueberries
  • 1 cup crumbled feta cheese
  • Fresh mint and basil leaves, thinly sliced
  • Juice of 1 ½ limes
  • 1 tablespoon extra virgin olive oil
  • 1 to 2 tablespoons honey
  • A pinch of salt

Instructions

  1. In a mason jar, mix the lime juice, olive oil, honey, and salt. Shake well until combined.
  2. In a large bowl, combine cubed watermelon, blueberries, sliced mint and basil, and crumbled feta cheese (reserve some feta for garnish). Pour the dressing over the salad and gently toss to coat all ingredients.
  3. Garnish with remaining feta and additional mint and basil leaves before serving immediately for the freshest taste.
