  • 1/2 cup vegan butter or margarine (chilled)
  • 3 tablespoons granulated sugar (brown sugar or coconut sugar)
  • 23 tablespoons cold water

  • 2 teaspoons ground cinnamon
  • 1 tablespoon all-purpose plain flour
  • 45 apples (cored)
  • Dash of lemon juice (optional)
  • 2 tablespoons vegan butter or coconut oil (melted)
  • 3 tablespoons apricot jam

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch loose-bottom tart pan.
  2. For the pastry, mix flour and chilled vegan butter until crumbly. Add sugar and cold water gradually until dough forms. Chill while preparing the filling.
  3. Core and slice apples; toss with sugar, cinnamon, and optional lemon juice.
  4. Roll out pastry dough to fit the tart pan; fill with apple mixture and drizzle melted vegan butter on top.
  5. Bake for 70 minutes until golden brown. Brush with apricot jam while warm and let cool before slicing.
