  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 vanilla bean, seeds scraped
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into bottom of each liner to form the crust.
  3. Beat cream cheese and sugar until smooth; add eggs one at a time. Mix in sour cream, heavy cream, vanilla seeds, and extract until combined.
  4. Divide batter among liners and bake for 20-25 minutes until set but slightly jiggly. Cool at room temperature then refrigerate for at least two hours.
  5. Just before serving, sprinkle sugar on top of each cupcake and caramelize with a kitchen torch.
