  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1 cup shredded carrots
  • 3 green onions, thinly sliced
  • ½ cup fresh cilantro, chopped
  • ½ cup chopped peanuts (or sunflower seeds)
  • 3 tablespoons soy sauce
  • 3 tablespoons lime juice
  • 1 tablespoon honey (or maple syrup)
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • 2 tablespoons sesame seeds

Instructions

  1. Rinse quinoa under cold water and cook according to package directions until fluffy. Let it cool.
  2. In a large bowl, combine cooled quinoa with red bell pepper, cucumber, carrots, green onions, cilantro, peanuts (or sunflower seeds).
  3. In a small bowl, whisk together soy sauce, lime juice, honey (or maple syrup), sesame oil, ginger, garlic, salt, and pepper.
  4. Pour dressing over the salad mixture and toss gently to coat.
