  • 2 cups water
  • 1 cup red bell pepper, diced
  • 1 cup cucumber, diced
  • 1 cup shredded carrots
  • 1 cup green onions, sliced
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped peanuts
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced

Instructions

  1. In a medium saucepan, combine rinsed quinoa and water. Bring to a boil, then reduce heat to low. Cover and simmer for about 15 minutes until water is absorbed.
  2. Dice red bell peppers and cucumbers, shred carrots, slice green onions, and chop cilantro.
  3. In a large bowl, combine cooled quinoa with prepared vegetables, peanuts, and sesame seeds.
  4. In a small bowl, whisk together soy sauce, lime juice, honey, sesame oil, ginger, garlic, salt, and pepper.
  5. Pour dressing over the salad mixture and toss gently until well-coated.
  6. Refrigerate for at least 30 minutes to allow flavors to meld.
