  • 5 pounds sweet potatoes (peeled and cut into 2-inch pieces)
  • 1 cup water
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup melted butter
  • 1 cup brown sugar
  • ½ cup heavy cream (or milk)
  • 1 cup chopped pecans
  • 34 cups mini vegan marshmallows

Instructions

  1. Cook sweet potatoes in boiling water until tender. Drain and mash until smooth.
  2. Preheat oven to 375°F.
  3. Combine mashed sweet potatoes with eggs, vanilla extract, melted butter, brown sugar, salt, and heavy cream.
  4. Spread the mixture in a greased 9×13 baking dish.
  5. For the topping, mix brown sugar, flour, melted butter, and chopped pecans together.
  6. Sprinkle topping over the sweet potatoes and bake uncovered for 20-25 minutes until bubbly.
  7. Add mini vegan marshmallows on top and bake for an additional 5-7 minutes until puffy and lightly browned.
