  • 0.25 tsp salt (for the filling)
  • 3 large eggs (for the filling)
  • 2 tbsp unsalted butter (melted for the filling)
  • 0.5 cup all-purpose flour (for the crumble topping)
  • 0.5 cup granulated sugar (for the crumble topping)
  • 0.25 cup unsalted butter (cold and cut into small pieces)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in one egg and vanilla extract, then mix in flour and baking powder until just combined.
  3. Press half of the dough into the bottom of the prepared pan.
  4. In another bowl, whisk together lemon juice, sugar, flour, salt, eggs, and melted butter for the filling until smooth.
  5. Pour the filling over the cookie crust evenly.
  6. For the crumble topping, combine flour, sugar, and cold butter pieces until crumbly; sprinkle over the filling.
  7. Bake for about 40-45 minutes or until golden brown on top and set in the middle.
  8. Let cool completely before slicing into squares.
