  • 10 mini pumpkins
  • 1 lb (450 g) ground beef
  • 1 can (15 oz / 425 g) pumpkin puree
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp pumpkin pie spice
  • 1/2 tbsp fresh thyme
  • 1/2 tbsp fresh oregano
  • 1/2 tbsp fresh sage, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse mini pumpkins, cut off the tops and scoop out the seeds.
  3. Sauté onion and garlic in olive oil until fragrant.
  4. In a bowl, mix sautéed onion and garlic with ground beef, pumpkin puree, herbs, salt, pepper, and spices until well combined.
  5. Grease a baking dish with olive oil and arrange the pumpkins inside.
  6. Fill each pumpkin with the stuffing mixture and replace the tops.
  7. Roast for 30 to 35 minutes or until tender.
