  • 4 Cornish game hens
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 teaspoons garlic powder
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 1 cup bread crumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1/4 cup raisins or dried cranberries (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup chicken broth
  • 2 tablespoons butter, melted
  • 1/4 cup white grape juice or apple juice

Instructions

  1. Preheat the oven to 375°F (190°C). Rinse and pat dry the Cornish game hens.
  2. In a bowl, mix olive oil, salt, pepper, garlic powder, thyme, and paprika. Rub over each hen.
  3. Combine bread crumbs with onions, celery, carrots, chicken broth, melted butter in another bowl.
  4. Stuff each hen with the mixture and secure openings if necessary.
  5. Place hens in a roasting pan, baste with grape or apple juice, and bake for about 70 minutes until cooked through (internal temp of 165°F/75°C).
  6. Let rest for 10 minutes before serving.
