  • 2 large sweet potatoes, peeled and cut into chunks

  • 1/2 cup heavy cream (or coconut milk for dairy-free)
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder (optional, for extra flavor)
  • 1 tablespoon fresh oregano (or basil)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili flakes (optional, for heat)
  • 1/4 teaspoon cinnamon (optional, for extra flavor)

Instructions

  1. Boil sweet potatoes in salted water until fork-tender (15-20 minutes). Drain and set aside.
  2. For the green sauce, blend parsley, cilantro, lemon juice, olive oil, apple cider vinegar, minced garlic, salt, and pepper until smooth.
  3. Heat olive oil in a skillet over medium-high heat. Season steaks with salt and pepper; cook for 4-5 minutes on each side for medium-rare. Let rest.
