  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (8.5 oz) box corn muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. In a large skillet over medium heat, brown the ground beef while breaking it into smaller pieces. Add the onion and garlic; sauté until fragrant.
  2. Stir in the corn, black beans, and diced tomatoes along with the spices. Simmer for about 5 to 7 minutes.
  3. In a separate bowl, mix the corn muffin mix with egg and milk until just combined.
  4. Pour the beef mixture into a greased baking dish and spread the cornbread batter over the top.
  5. Bake at 375°F (190°C) for 25 to 30 minutes until the cornbread is golden brown.
  6. Top with shredded cheese and return to the oven briefly to melt.
